Oatmeal, Banana, Chocolate Chip and Walnut Pancakes
This recipe is staple at my house. It is my go to on a lazy Saturday morning. If you do not like chocolate chips, walnuts or bananas (what is wrong with you?) you can omit them. You can add blueberries and lemon zest if you like. Yes, you use a lot of bowls for this recipe but it is worth it.
Ingredients
1 1/2 cup rolled oats
1 cup buttermilk
1 cup flour
1/2 cup whole wheat flour
1/4 cup sugar
1tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp of cinnamon
3 eggs
1 1/2 cups of milk
1 tsp vanilla extract
2 bananas smashed in to pieces
1/2 cup walnut pieces
1/3 cup chocolate chips
Soak the oats in the buttermilk for 15 minutes. In a separate bowl combine dry ingredients. In another large bowl whisk the eggs and add the milk and vanilla. Add the bananas to the egg mixture. Combine the dry ingredients and the soaked oats with the egg mixture. Fold in the chocolate chips and walnuts. Pour 1/2 cup of the batter onto hot, buttered griddle. Cook until bubbles appear and flip. Cook for another 2 minutes or until pancake is golden brown. Serve with either maple syrup or honey. Enjoy!
